For the past eleven years, I have been a core staff member of the Deli team. As a senior staff member, I have a broad range of duties involving both day-to-day and long-term running of the section, including:
Preparing hot and cold foods to customer specifications, displaying Dunnes Stores world-class customer care standards. We cook whole chickens (flavoured and plain) chicken pieces, and various hot finger food (wedges, hash browns, sausage rolls) with rotisserie and steam ovens.

Ensuring all customers are approached after spending thirty seconds in our section.
Ensuring customers needs are met (and always asking if there is anything else we can do for them.)
Giving recommendations on the preparation and cooking of cold meats.
Upselling of special offers.
Ensuring an attractive display of hot foods and salads, ensuring consistent stock levels and food freshness and preventing cross-contamination of offerings.
I am responsible for opening the counter. This involves the setting out of products, following date-coding of opened stock and documenting the counter’s date tracker sheets. I also unpack the morning delivery on the shop floor.
I am also responsible for closing the counter, including the removal of stock, reduction of dated items, counter deep cleaning and preparation work for the following morning.
During the day, I am also responsible for the upkeep of the counters.
Strict maintenance of hygiene in food preparation and storage areas in accordance to HACCP standards. We receive retraining in HACCP regulations every two years.
Twice daily documented temperature checks on food on the counters (as required by law)
Notation of temperature of food as it leaves the oven and enters the display. High readings (on cold meat and raw food) and low readings (on hot food) are immediately reported to management.
Weekly deep cleaning of the counters in rotation. This includes the fish counter, which involves removal of stock, melting ice, scrubbing the counter, ensuring meltwater drains are not blocked and restocking ice in preparation for the morning.
Ensuring an attractive display of hot foods and salads, ensuring consistent stock levels and food freshness and preventing cross-contamination of offerings.
Being mindful of wastage levels and quotas.
As a senior member of staff, I am responsible for the training, orientation and supervision of new hires.
The role itself is very varied, and aside from counters and the deli floor, I often assist in the restaurant (dishwasher duty or table clearing) and occasionally travel to other store locations due to short staffing.

My duties with Cork Animal Shelter included dog walking, answering phones and assisting with adoptions and surrenders. I was involved in processing of paperwork and data entry of the Dog Warden’s reports, count and record donations.
I am also interested in gaming culture and Japanese culture and enjoy going to various conventions that are held during the year in various locations around Ireland.
