I returned to education as a Mature Student in September 2013 studying Professional Cookery, FETAC Level 5, in the Cork College of Commerce, in which I attained DISTINCTION in all of my exams. I went on to attend CIT, Cork Institute of Technology, in September 2014, to complete a Higher Certificate in Culinary Studies, which I completed in May 2016 and achieved a grade of DISTINCTION, in all modules. I am a loyal, flexible, very dependable and hardworking individual.

As part of my Higher Certificate in Culinary Studies I was required to complete 12 weeks work experience in a professional restaurant, which I completed in, The Water’s Edge Hotel in Cobh, under Head Chef, Zoltan Szeplaki. I started as commis chef responsible for prep and was promoted to the position of Breakfast Chef within 2 weeks. Within 2 months I found myself in charge of full kitchen operations as a result of both the head chef and sous chef resigning their positions, leaving me responsible for Breakfast, Lunch and Dinner service, cooking and plating dishes, to a high standard, to order, in a busy hotel restaurant.

Cork, where I completed the required work experience, and was kept on through the busy Christmas and New Year period, where I gained valuable experience in a busy kitchen, under the instruction of an excellent Head Chef, preparing, cooking and plating starter, mains and dessert dishes, to order.
